Without knowing exactly the exact kind pump you have, here is the general idea.
You typically want to start with with higher-flow operation when the pump first starts. You want to ensure the pump easily achieves priming, and you usually want the pump to initially have a flow rate which is high enough to enable very good skimming in the pool (typically, this may be a few hours).
For the rest of a variable speed pump's daily operation, you want to make sure your pump is not running at high speed. Modest RPM reductions can produce disproportionately large energy savings. Similarly, the lower the flow rates, the better the filtration you get typically. But importantly, whenever the pool equipment is in operation you always want to make sure that you achieve the minimum flow required for other pool equipment, such as heat pumps, salt cells, cleaners, water features, etc...
After initial high speed operation, many people will set a moderate level of operation to help continue good circulation within the pool, and will decrease to a lower level of operation for a later portion of the day to still provide water movement while consuming a very low level of energy. Depending on how many program options you have, some people may opt for a final period of higher-speed operation to skim and catch late-day debris.
You can think through what is practical or necessary for your unique setup. Always be sure to coordinate the pump's operation if you have other equipment that is flow dependent. For example, if have a water feature that needs high flow from your main circulation pump, you'll want to coordinate that with your programming.
If you are setting a pump's RPM level and you don't know your pool's flow rates, ideally you'll want to get a flow meter so you can immediately know the resulting flow rate in GPM when you choose different RPM settings. Many variable-speed pumps are set too high, and can be providing high-enough flow without unnecessarily running at high speeds that waste electricity. Similarly, its possible to choose a pump RPM setting that is too low for the other pool equipment to operate correctly.
If you know your pool's flow rates, and how long you run the pump at each flow rate, you can then calculate how many gallons of water you have circulated. This is the pool's "turnover", which is a helpful gauge to know if you are running your pump too much or too little. In the past, pool owners targeted 1x to 2x turnovers a day, however with modern pool systems a target of 1x turnovers is often sufficient and more realistic.
So the overall approach is to start with higher operation, long enough for strong skimming, then reduce speed within practical constraints throughout the day. But there is no one single correct pump schedule for every pool. Your pool needs to circulate and move a certain amount water while ensuring the other parts of your pool system operate correctly, and that is dependent on factors such as your flow rate, pool size, and other particulars.
