I need to replace my cells but cannot tell which of the 3 SGS Breeze units I have (320. 540, 760). Is the 5-plate replacement cells for the 540 acceptable also by the 320?

The first number of the model number is how many plates your current system has. The 320 and 540 cells can both be put on the same control module. The 760 uses a different control module that has a larger power supply inside.
